Oven Baked Squash

A dish that incomparably belongs to the Greek summer is the fried squash.

"Kolokithakia" is the Greek word to ask for this incredibly delicious, yet simple dish, which refers to the fried squash.

Elena's share here with you, a slightly healthier version of this traditional Greek appetizer, easier and easier to make, and just as delicious to offer to your diners!

This traditional Greek appetizer takes only 6 steps to make and they are:

  1. Preheat the oven to 200 C, with the fan on.

  2. Wash the squash thoroughly and cut them into thin round slices. Put them in a colander and salt them.

    Tip: Season them well now! The salt helps bring out more flavor as well as making them even crispier as it absorbs the water.

  3. In a large bowl, add the breadcrumbs, grated cheese and herbs and stir well.

  4. In another bowl add the eggs and in a third bowl add the flour.

  5. Dip squash into the bowl of flour, then into the bowl of egg, and finally into the bowl of breadcrumb mixture.

  6. Place the squash on the baking sheet and bake for 15 minutes, until golden.

Afterwards, you can sprinkle some of your favorite Greek herbs on top, and serve this Greek starter with some homemade tzatziki .

Enjoy them with a glass of Greek Ouzo or a cold Mythos !
