Noodles! Most people know and love the delicious, soft and slurp-worthy noodles!

They are typically known from Asia, where they come in a great variety of dishes and cooking methods. For example, it could be fried noodles, noodle soup, noodles with sauce or cold noodle salads!

But in fact you eat noodles in a large part of the world, from Persian Itriya , German Spältze, Indian Idiyappam and of course the most well-known, Italian pasta!

However, we choose to focus here on Asian noodles, as they are what you most often think of when you hear the word noodles. The first noodles can also be traced back to 4,000 years ago in China, and written texts about noodles from the Han dynasty have also been found. Therefore, it is possible that noodles as we know them today originated from there!

There are many traditions around noodles in Asia, everything from ingredients, manufacturing methods and cooking methods.

Noodles are most often made by mixing a type of flour with either water or eggs. It can be, for example, wheat flour, rice flour, buckwheat flour or something completely different! They are then either stretched or cut into long strips, either thick or thin.

The frame

In Japan, you often eat noodles like Ramen , which is a soup with special Ramen noodles and delicious toppings in the soup, such as meat, soft-boiled eggs and vegetables.

Ramen can be made more or less complicated, but you will definitely get a big reward by making real Ramen from scratch!

Most instant noodles are also Ramen, so if you don't have the patience to boil bone stock and chop vegetables, this is an easy and tasty solution too!

Some of the classic Ramen dishes are, for example, Tonkotsu Ramen, Shoyu Ramen and Miso Ramen, but there are many varieties!

A bowl of Ramen usually consists of noodles, stock, various vegetables, some form of meat or fish and spring onions on top. Often there is also a soft-boiled egg, which is sometimes marinated in, for example, soy or teriyaki. On top, you can choose to add some sesame seeds or sesame oil, some seaweed such as nori or wakame, and possibly chili oil or Sriracha!

Some restaurants also serve Ramen, so if you are lucky enough to find it on the menu, it can definitely be recommended!

Other types of noodles

Vermicelli noodles are eaten in many parts of Asia and are believed to have originated in northern China.

They were not used to eating rice in that part of the country, so when they invaded the southern part of China, the Northern Chinese chose to make a type of rice flour noodle that was more to their taste.

Vermicelli noodles are eaten in everything from noodle soups, fried noodles, noodle salads and rice paper rolls. They are widely eaten both in Thailand, Vietnam and China, and they can be made from rice flour, sweet potato starch or different types of beans. Common to all of them, however, is the shape, which is very thin, round and long.

Mie noodles are wheat noodles, which are typically slightly yellow in color and semi-curled in shape. They can be confused with egg noodles as they look very similar, but these only contain wheat, salt and water.

Mie noodles are widely used in Southeast Asia, and are especially known from the Indonesian dish Mie Goreng!

Mie Goreng is a type of fried noodle that is very similar to the Chinese dishes Chow Mein and Lo Mein.

Mie Goreng includes Mie noodles, vegetables such as cabbage, carrots, spring onions and peppers, proteins such as eggs, prawns, chicken or beef, and a classic stir-fry sauce consisting of ketchup manis, soy, oyster sauce and sesame oil!

It is best made in a wok, but can also be made in a pan. This dish is super easy to put together and can be made in about 15 minutes!

Egg noodles are typically used in Lo mein and Chow Mein, which are Chinese noodle dishes made with wonderful egg noodles! The two dishes are very similar, but they are prepared in two different ways:

Chow Mein is fried noodles that have a slightly crispy and crunchy result, with lots of vegetables and a wonderful umami sauce.

Lo mein are the delicious egg noodles that are simply boiled, and then combined with the fantastic sauce and the wonderful vegetables.

In both dishes, you can add chicken, beef, shrimp, pork, tofu or whatever your heart desires!

Rice noodles are often used in Thailand, they are also called rice sticks, and they come in different thicknesses and widths. For example, rice noodles are used in the well-known dish Pad Thai, which tastes absolutely fantastic!

Rice noodles are also used in the wonderful Vietnamese dish Pho, which is a tasty soup with noodles, often accompanied by chicken or beef, chilli, bean sprouts and coriander.

In Singapore, you often eat Chow Mei Fun, which are delicious rice noodles, often with chicken and prawns and a touch of curry!

They come in packets of dried noodles, and all you have to do is follow the instructions on the packets and you'll have wonderful, delicious, homemade noodle dishes in no time!

In addition to dried noodles, you can also make fresh noodles yourself, which for good reasons we do not sell here on the site. But it's a delight to the mouth if you put in the time!

In China, for example, there is a great tradition around hand-pulled noodles, which are made from a soft wheat dough and pulled in different ways depending on which region they come from. These noodles are called Lamian, and can typically only be found in restaurants where they are eaten the same day they are drawn.

As you can see, noodles are a whole world of their own just waiting to be explored!
