This book puts cephalopods on the menu and at the same time provides a description of their biology, cultural history and an explanation of what makes cephalopods healthy, varied and interesting food. With a large number of simple recipes for cooking squid, the book demystifies the claim that cooking with squid is difficult. At the same time, it contributes to the debate about how we can make better use of the sea's resources in a sustainable way. The book is based on a collaboration between a chef and a natural scientist, who have gone into the kitchen together to cook with squid.
