If you translate the Spanish name, it means "the beautiful one from the north", and this well describes the beautiful pieces of tuna that you find in the can!

Bonito tuna stands out from the crowd by being almost white in color (which is why it is also called albacore tuna) as well as its fine velvety texture and delicate taste, which stands in stark contrast to the more common Skipjack tuna. Skipjack is typically more reddish in color and more metallic in taste, as well as far less rare to encounter.

Bonito tuna is caught in the Bay of Vizcaya, which is located in the Basque Country in northern Spain. They are born in the Sargasso Sea, which is part of the Atlantic Ocean, and from here they migrate in groups of the same size to the sea around the Canary Islands to winter the first year. When spring hits and the young Bonito tuna measure around half a meter, they migrate to the Bay of Biscay in search of food. Here they stay until the autumn, and then return to their birthplace. In the third year, they reach sexual maturity, and then change their migratory behavior, becoming more solitary and seeking deeper waters.
