This paté with "the Iberian secret" is made from the most beautiful cut from the Iberian pig, which is called secret because it is so delicious that the butchers typically keep this cut for themselves!
Iberico pigs are a special breed of pig which are small, brown in color and are often fed acorns, either partially or exclusively. They typically go to large areas in Spain, where they can rummage with their snouts under the beautiful, crooked Spanish trees. And then, of course, it is this pig that is used to make the fantastic, world-renowned gourmet ham, Iberico ham!
In this pâté, lovely, good quality Spanish olive oil has also been added. This pâté is perfect on the tapas table, where it can be spread on a good piece of bread, a Spanish regaña biscuit or Spanish picos!
