Pancetta is Italy's wonderful answer to bacon, only even more complex and delicious in taste!
Pancetta, unlike bacon, is dry-salted and not smoked, so it can therefore be eaten as is or as an ingredient in cooking. Pancetta comes in two varieties, an arrotolata which is rolled, very similar to a Porcetta, and this version is often eaten thinly sliced as a topping in a nice sandwich or as an Italian charcuterie. Steso is the flat version that you get here, and it is typically cut into cubes or slices and used in cooking.
For example, you can use your Pancetta steso in carbonara (although it is most authentic with Guanciale ) or you can also use it in pasta all'Abruzzese, which is a wonderful pasta dish with Pancetta, Pecorino Romano, parsley, basil and onion.
The Italians also like to enjoy their Pancetta thickly sliced and then grilled!
You can of course also use your Pancetta in all dishes you would use bacon in, but Pancetta is more salty and not smoky in taste, so adjust the amount of salt in the recipe. But Pancetta is wonderful in both omelettes, risotto or on pizza!
